Made a big batch of chicken and vegetable soup. 4 jars with rice, 3 plain (1 of the jars gets shared with a friend), then the rest added tomatoes from the garden and canned another 5 jars. Was going to add rice to some of these and then realized this is the perfect base for tortilla soup. Have made and canned a lot of soup so far this year, and intend to do some more. Bean, lentil and pea.
Wonder how it is, I can make these big batches of soup, but can’t stand to cook the evening meal – that is, unless I can just open a jar of soup and add a sandwich or salad!! And right now, its too hot for soup for dinner.
