9.4.12 canning

Another FINALLY.  Grew enough of my own zucchini and tomato to can.  only other ingredients are onion and garlic.  See more people trying to can zukes these days.  These pints are done at 15lbs (4500 feet) and 30 minutes.  8 pints and at least 8 zukes, maybe more.   The time is based on seeing others successfully can quarts for 40 minutes, and that just crushed tomatoes would be 10-15.  So far am pleased, looking forward to how they will taste!!  Every step makes me aware of how much work is necessary to really be self sufficient.  This is only 8 pints! What if I wanted a year’s worth!!!!! which I ultimately do.
