pear honey

may never be the locavore I’d like to be, but try. 2012, despite the very dry weather, the local pears were totally awesome and my neighbor (who owns the trees) was generous with sharing.  After canning several jars, took the juice that was left and boiled it down.  had added sweetened dried cranberries to the pears, so there was sweet and cranberry taste in the juice.  when the juice was boiled down to about 1/2 its orginal volume, canned about 10oz.  This am made some blueberry (frozen in June) pancakes topped with pear honey.  Oh was it good!  needed nothing else on those pancakes.  wish I’d heard of this before!
