pepper sandwich

While we were on vacation, spent three days in a “cabin” with kitchen and other luxuries so we could have our own meals while doing Yellowstone.  Early morning breakfast for me was cottage cheese and my breakfast jerky (see earlier posts).  Dinner we heated up some precooked chicken and had a salad.  Lunch was sandwiches.  He had turkey and cheese with butter (decided to do without getting miracle whip as well as butter) on a roll.  For me, cut a big sweet pepper in half, took out the seeds and used that for my “bread”.  it was crunchy, moist, sweet, and filling.  Also much easier to keep in the cooler than a lettuce wrap which tended to get limp and soggy.

So on the road, pepper sandwiches it is!
